We're Nadine Doyle and Kevin Puloski. The Quixote House is our home — a Quinta in Caminha, northern Portugal, where the Minho River meets the Atlantic, and Spain sits just across the water.

This is not a program.

There is no schedule of transformation, no mandatory circles, no morning rituals you did not ask for. What we've built this time is a table — and what happens around it is food, wine, and as much or as little of your own participation as you want.

Seven days, six nights at the Quinta — in the Minho, Portugal's Vinho Verde country, where wine is still meant to be drunk the way it was intended: together, at a long table, unhurried.

We keep it small — five guests — because that is the number where real conversation happens.

What to expect

You'll pick lemons off our trees, eat from our wood-fired Portuguese oven, and wake to the rooster. Each evening, Nadine and Kevin lead a different technique at the stove — you're welcome at the counter with a knife in hand, or in a chair with a glass of Alvarinho, watching.

Nothing here is mandatory. The wine is tasted the way the Portuguese take it: unrushed, shared, at the long table, with a great meal.

Three meals out, exploring the tables of the Minho. The rest, we cook together — or you don't, and that's exactly as it should be.

Optional excursions

We'll plan a few outings during your stay — a morning at the Caminha market, a day trip and lunch in Ponte de Lima; Portugal's oldest town; to experience the famous Leitao - suckling pig, and a visit to a local winery. Join all of them, some, or none. This week is yours.

You don't need a reason to come. You just need six nights at a table where someone else is doing the cooking, the pouring, and the noticing — and nothing here asks anything of you in return.

Cooking Classes

The Quinta sits above the River Minho in Caminha, one of the most quietly beautiful corners of northern Portugal. Stone walls, old trees, a long table that has fed more people than we can count.

It is the kind of place that does the work before you even unpack. Something about the light, the stillness, the fact that nothing here is asking anything of you.

This is where we host a small group of women every season — to eat well, sleep properly, and remember what it feels like to be somewhere that is entirely, unhurriedly yours.

The Local Area

Caminha is a beautiful historical village in the North of Portugal. It is located right at the mouth of the River Minho, in a place blessed by nature, on the border with Spain, and has a fantastic view of Santa Tecla.

The village is home to several great restaurants, cafes, and shops, making it an ideal location to explore.

Enjoy a wander around the historical centre, where you can see the remains of the original walls, or head to the Foz do Minho beach, where you’ll find crystal clear waters and white sand beaches.

Due to its unique location, Caminha offers a variety of activities and experiences, including stand-up paddle boarding, kayaking, surfing, bicycle rentals, rowing, wine tasting, spas, birdwatching, yoga, and hiking.
